Serves 4
This breakfast gives you healthy start
to the day, and has a great variety of texture
and flavour.
2 tbsp light olive oil
2 tbsp malt extract
2 tbsp clear honey
75g rolled oats
50g jumbo oats
25g barley flakes
25g desiccated coconut
15g sesame seeds
25g sunflower seeds
25g mixed nuts, chopped
½ tbsp ground mixed spice
½ tbsp ground cinnamon
To Serve
150g green seedless grapes, halved
2 oranges, segmented
Skimmed milk or low-fat natural yoghurt
Mix the oil, malt and honey together in
a saucepan and heat gently until runny.
Stir the oats, barley flakes, coconut, sesame
and sunflower seeds, nuts and spices into
the honey mix.
Spread evenly over a large baking tray
or rotating pan and bake in preheated oven
at 190 degrees C/gas mark 5 for 20-25mins,
until golden and crisp. Stir 3-4 times to
avoid over-browning on the top surface.
Leave to cool, then store in an airtight
container until required.
To serve, place in individual bowls and
arrange the grapes and orange segments on
top. Serve with skimmed milk or natural
low fat yoghurt as required.
