Serves 4
Wrap salmon fillets in foil and cook them
on the grill, and you’ll be well on
your way to a dinner with almost nothing
to clean. Just crumple up the foil, throw
it away and the dishes are done.
Ingredients
2 tsp unsalted butter
Six pieces 4-cm thick skinless salmon fillets
6 tomatoes, cut into wedges
6 spring onions (white and green parts),
chopped
2 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp caster sugar
Whole or chopped herbs, such as dill, coriander
and parsley
Method
1. Cut six large squares of heavy-duty foil.
Butter the foil and lay a salmon fillet
on each square. Top with some tomato wedges
and a sprinkling of spring onions.
2. Whisk together the oil, lemon juice and
sugar. Drizzle it over the salmon. Add a
few sprigs of herbs to the parcels.
3. Close the parcels, being sure to secure
the seams. Broil over medium-hot heat, turning
occasionally, for 8-10 minutes. Carefully
open the parcels to avoid the steam, and
serve immediately.
