This is a meatless chilli, which originates
from Orlando, Florida. Instead of using
a meat substitute, peaches are used to make
a sweet and delicious meal. Peaches contain
vitamin
C, boron
(trace mineral – helps in calcium
metabolism, building strong bones), selenium,
potassium,
and beta-carotene.
Tomatoes which are rich in lycopene (an
antioxidant with cancer prevention properties)
are also used for this dish.
Ingredients
1 red pepper, coarsely chopped
2 green peppers, coarsely chopped
1 large onion, coarsely chopped
1 peach, peeled and coarsely chopped
2 x 400 g cans tomatoes, coarsely chopped
2 x 400 g cans tomato sauce
1 tsp Tabasco sauce
1/4 tsp dried thyme
1 tsp dried oregano
2 tsp ground cumin, or more to taste 1 tbsp
chilli powder
1 tsp black pepper
2 x 300 g cans cannelloni beans
2 x 450 g cans black beans
450 g can kidney beans
Method
1. Put all the ingredients, except the
beans, in a stock pot with about 250 ml
water and stir well.
2. Bring to the boil, reduce heat and simmer
for 30 minutes, stirring often to avoid
scorching, and adding water if needed.
3. After 30 minutes, add the beans and
enough liquid for the desired consistency;
Simmer for 15 minutes more. Taste and adjust
seasonings.
